Camping Chow – One-Pot Vegetarian Meals to Whip Up In The Woods

When in comes to camping food, most folks think of hot dogs and a steak or two. But, vegetarian camping delights are fun, nutritious and don’t need a big, clunky cooler full of ice. In fact, you can do a whole whack of camp meals in one pot, without chopping a thing, in about 10 minutes. That is a thing of beauty when the kids are starving, you are exhausted and really all you want is to get to the smore making portion of the evening.

Here are a pile of  yummy of 1-pot vegetarian camping meals that will make sure no one even misses those hot dogs you skipped out on this year:

Dehydrated Camping Meals

The best tool for awesome vegetarian camping meals is a dehydrator. This modern kitchen staple is awesome because you can literally start the week before you hit the road and dry everything from tomatoes and celery to mushrooms and even fruit for extra snacks.

You can, literally, cut your camping food budget in half by drying your food and making up single-meal mixes. It also cuts down on the space your food takes up and leaves you with less trash.

The easiest way to start is to think about what you would put in a traditional meal like spaghetti or chili (which are two that we’ll go through here), cut up the ingredients one at a time and start drying (i.e. dry all of your celery at once, all of your onions at once).

Then, start combining in plastic bags that you can label. You can even throw the spices in the bag and you’re set to go.

Camping Food | Vegetarian Chili

Camping Food Recipe | 1-Pot Vegetarian Chili

Dry:

  • 1 zucchini cut into rounds
  • 1 onion
  • 1 red pepper
  • a handful of slice mushrooms

Other ingredients:

  • 1 large can of diced tomatoes
  • 1 can of kidney beans
  • 1 tbsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 tsp of garlic powder (or you can dry some garlic)
  • Tortilla chips

Directions: Throw it all in together and let it simmer for 1o minutes. Serve over the tortilla chips. Yum

Camping Food | Dehydrated Spaghetti Mix

Camping Food | 1-Pot Vegetarian Spaghetti

Dry:

  • 1 zucchini
  • Handful of mushrooms
  • 1 onion

Camping Meals | Vegetarian Spaghetti

Other ingredients:

  • 1 can of spaghetti sauce
  • 1 package of your favorite noodles
  • Salt and pepper to taste

Directions: Throw it all in together and cook until noodles are tender. Serve with a smile and some good bread.

Camping Food | Bannock

Our favorite camping food this year is by far bannock. Pre-make the mixes (1 C flour, 1 tbsp baking powder, 1 tsp of salt) and then mix them with about 1 Cup of water and 1 tbsp of oil when you are ready to make it. Find some good baking sticks and cook it right over the fire for about 10 to 15 minutes. Yum! And great for PBJ in the morning if there are any leftovers.
